Blackberry Cobbler

Its SATURDAY... which means.. The Pioneer Woman is on the Food Network.!!
I somehow always seem to miss the first 10 minutes of the episode BUT we did catch the best part of the show...her COOKING :)

On the menu today was her yummy Pot Roast, Creamy Mashed Potatoes AND Blackberry Cobbler.. and guess what we ended up having today.. Exactly that :)

I forgot to take pictures of the first couple steps but it pretty much goes like this, melt your butter, Add 1 cup of sugar, and 1 cup of Self Rising Flour (I didn't have any so I made my own with All Purpose flour, baking powder and salt) Whisk in your milk, Mix well and then pour in your melted butter and whisk all together until blended! That mixture is all done now!!

I got two packages of Blackberries but only used about 1, the boys and hubby ate the rest

Butter your dish ..yum

Pour in your mixture, and dump in your blackberries, or you could space them evenly like I did! haha! Sprinkle some more sugar on top for a extra crunch and bake in a 350 degree oven for one hour.

I served mine with some whipped cream but I think Vanilla Ice cream would have been pretty great too!! This was SO easy, Maybe a Blueberry one next time??

List of Ingredients:

*1 cup Self Rising Flour
*1 cup Sugar
*1 cup of Milk
*1 stick of Butter (1/2 cup)
*2 cups of Blackberries (I only used about one)

Instructions:

1. Melt your butter in the microwave

2. Add the Flour and Sugar in the bowl and mix

3. Whisk in your Milk

4. Pour in Melted butter and mix until all in blended together

5. Rinse and pat dry your blackberries

6. Butter your dish and pour in the mixture

7. Place your blackberries in evenly and sprinkle with sugar (she calls for 1/4 cup)

and Bake in a 350 degree oven for one hour :)

Super Simple Salsa

We're kinda obsessed with Salsa lately..

Hubby requested Taco Rice for dinner so I thought it was the perfect opportunity to try another Salsa recipe!
I worked with what we had in the fridge

This is what I used:

6 Roma Tomatoes, 1 Onion (chopped), 3~4 Garlic Cloves, 1 Lime (Juice Squeezed), a handful of Cilantro

1. Dice your tomatoes
2. I blended my Cilantro and Garlic (I was lazy, plus I wanted to you my mini blender) Chopping them up to itty bitty pieces
3. Chop your onion and add to the mixture
4. Squeeze your lime juice
5. Add some Salt and Pepper

and Ta-Da~ Thats it!! Super Easy right??

Peanut Butter Cookies with Chocolate Chips

Hi!!

Today, since the boys kept asking me for cookies, I decided to try a new recipe out!
I was browsing through my usual 100+ blogs that I read weekly and stumbled upon this amazing looking recipe!!

This amazing recipe is from Jessica at How Sweet it is

So lets get started!!

1. Preheat your oven to 325 degrees, Meanwhile, add the butter and peanut butter to a microwave safe bowl and melt, I did it in 30 second increments just like she recommended :) Let cool completely.

2.Mix your flour and baking soda together in a bowl and set aside. In another bowl, Mix the melted and cooled butter and peanut butter with the sugar and brown sugar until combined.
Add the egg and egg yolk and vanilla and stir, (yum..I love vanilla)

Gradually add the flour and baking soda mixture until the dough forms. (On her recipe she said that it may be crumbly and you may need to add a teaspoon of milk, but I didnt need to)

Fold in the YUMMY chocolate chips.. (I used mini chocolate chips, Yes.. you are seeing that right, we used 2 cups of chocolate chips..) I didn't mean to and was wondering if its supposed to be this chocolate chippy~!? lol

Roll them into a golf ball sized balls, and bake for about 10-12 minutes or until the edges are brownish :) I love this recipe because the cookies didnt melt into a big mess in the oven!

What you will need :

* 2 cup All Purpose Flour

* 1/2 teaspoon Baking Soda

* 8 Tablespoons of Salted Butter (Melted and Cooled)

* 6 Tablespoons of Creamy Peanut Butter (Melted and Cooled)

* 1 Cup Brown Sugar

* 1/2 Cup Sugar

* 1 Egg and 1 Egg Yolk at Room Temperature

* 2 Teaspoon of Vanilla

* 1 1/2 cup of Semi-Sweet Chocolate Chips :)

Woo hoo to my 1st post on my blog!! Im so excited :)

Now that I got that out of the way..
I am a HUGE fan of The Pioneer Woman
I usually try to make everything that looks yummy on her Blog... Which is pretty much EVERYTHING!
This is one of her recipes that I saw and thought.."Oh wow.. that looks amazing" and then I read the title, "Pig Cake".. Ew.. Right? Well It doesn't have pig in it! Not at all.. Whew!
Instead it has Cool whip, pineapples, mandarin oranges.. Umm.. Sign me up!

My husband's boss invited us over for dinner so I thought it would be PERFECT to take along with some Yummy Potato Salad!



Excuse my last minute photo, it really was last minute before we starting digging into it :D

Here is the Recipe : Directly from The Pioneer Woman

For the cake:
  • 1 box (18.25 oz) box of Yellow cake mix
  • 1 stick of margarine (softened)
  • 1 can (14oz) of Mandarin Oranges, Drained (Reserve 1/2 cup of juice from can)
  • 4 whole eggs
  • 1 teaspoon Vanilla Extract
For the Topping:
  • 1 package (4oz box) of Vanilla Instant pudding mix
  • 1 can (20oz) crushed pineapples (Juice reserved)
  • 1/2 cup Powdered Sugar
  • 4 oz, fluid frozen Whipping Topping (I used Cool Whip)
  • Extra mandarin oranges for Decoration, to make it extra pretty ofcourse :)
Instructions:

Preheat the oven to 350 degrees

For the cake, combine cake mix, softened margarine, 1/2 cup juice from the mandarin oranges, eggs, and vanilla. Beat for about four minutes on medium-high. Add the drained oranges and beat again until all the pieces are broken up and small in the batter. Pour batter into greasted and floured 9 x 13 in baking pan and bake for 25~30 minutes...Or until golden brown and set.
Remove from the oven and cool completely! (She turned hers out onto a pretty platter, but since mine was TOGO, I left it in my flimsy pan :D

Once the cake is cool, blend juice from drained pineapples with the vanilla pudding mix. Add powdered sugar and mix, then mix in whipped topping.. Stir in drained pineapple, Spread on cooled cake and refrigerate for several hours!

Garnish with some extra mandarin oranges..and ENJOY!
